Last weekend, I made one of my husband favorites! Eggs Benedict! Until about three days before, I COULDN'T poach an egg!! My mom, bless her heart, told me the trick... do you know it? Once the water boils in your pan, turn down the heat before you put the egg(s) in. Then they won't fall apart!! Who knew?? I have never read that in any recipe that I have read regarding poaching eggs!!! You can imagine that I was pleased to learn the trick! The only other --could be challenging --thing about Eggs Benedict --Hollandaise sauce! I cheated, used a packet, super easy that way!! But here is a link to a recipe for it from Julia Child. Still not so difficult!

Fruit Leather
Suprisingly easy to make, and yummy! Kids would love this!
Take 1/3 cup of your favorite preserves ((NO SUGAR ADDED)) and 1 teaspoon of Corn starch. Mix together. Place on greased Wax Paper.
Place in 225 degree oven for 45 minutes. Let cool. Cut edges of wax paper if necessary. Roll up. ENJOY!!

Just an average Saturday...
Nothing big today. Some minor work on the deck, some moving of items to storage, laundry, home depot, grocery. Really not exciting. As we come closer to living on our boat for the summer, I thought I should get this started, so that friends and family can see what we are doing over the summer....and perhaps further down the road. We are looking forward to summer on the boat, and even more forward to moving to our other home at the end of the summer!
For now, I should say farewell though, my husband is working, as I should be! More soon I am sure! Have a great day!
